Immune boosting bone broth and mushroom soup

This is one of my favorite go-to dishes for an incredibly tasty, quick and easy meal that is full of healthy goodness from the homemade broth and the mushrooms.



Serves 2

2 cups of grass-fed organic bone broth(homemade or quality store-bought)

200 g shiitake mushrooms

3 cloves garlic

Small bunch of fresh thyme(separate leaves from stalks)

2 tsp EVOO

Parsley or cilantro chopped for garnish


  • In a medium saucepan add finely chopped garlic and EVOO, sauté on med to low heat for 2 min
  • Add sliced mushrooms and thyme to the pan, sauté© for 3-4 minutes
  • Add bone broth, reduce heat and simmer for 5min
  • Serve with a garnish of fresh thyme and/or parsley

Variations to this are very easy. I often add organic coconut cream, red curry paste, ginger, and chili then garnish with coriander or cilantro for a spicier Thai inspired version.  Get creative and add your favorite herbs and spices!

Also worth noting is the wealth of enzymes in shiitake that results in better absorption of our food. 100 g of Shiitake contains: 3.6 g of Fibre, 4 g of Net Carbs, 0.35 g of Fat, and 3.5 g of Protein
