Immune boosting bone broth and mushroom soup
This is one of my favorite go-to dishes for an incredibly tasty, quick and easy meal that is full of healthy goodness from the homemade broth and the mushrooms.
2 cups of grass-fed organic bone broth(homemade or quality store-bought)
200 g shiitake mushrooms
3 cloves garlic
Small bunch of fresh thyme(separate leaves from stalks)
2 tsp EVOO
Parsley or cilantro chopped for garnish
- In a medium saucepan add finely chopped garlic and EVOO, sauté on med to low heat for 2 min
- Add sliced mushrooms and thyme to the pan, sauté© for 3-4 minutes
- Add bone broth, reduce heat and simmer for 5min
- Serve with a garnish of fresh thyme and/or parsley
Variations to this are very easy. I often add organic coconut cream, red curry paste, ginger, and chili then garnish with coriander or cilantro for a spicier Thai inspired version. Get creative and add your favorite herbs and spices!
Just 1 cup of broth has around 10 grams of protein! And, that protein comes from nearly 20 different essential and non-essential amino acids that leach into the broth. Plus, the calcium, magnesium, phosphorus, and many other essential minerals help flush out toxins and reduce inflammation in our bodies.
Shiitake is a well-known superfood because it has an array of vitamins, minerals, and enzymes that are necessary to fuel our bodily functions. Shiitake is an excellent choice of mushroom to boost the immune system due to its high nutrients, such as B vitamins, vitamin D, selenium, niacin, and 7 of the 8 essential amino acids. Also worth noting is the wealth of enzymes in shiitake that results in better absorption of our food. 100 g of Shiitake contains: 3.6 g of Fibre, 4 g of Net Carbs, 0.35 g of Fat, and 3.5 g of Protein
